School's Out!



There's nothing like Whoopie Pies to celebrate such an exciting day. Summer, here we come!

Warning: Do NOT read any further if you are on a diet or starting one tomorrow.


Chocolate Whoopie Pies
2/3 c. unsweetened Cocoa powder
1 t. baking soda
2 c. all-purpose white flour
1 t. baking powder
3/4 t. salt
1 1/3 c. packed light brown sugar
1/4 c. shortening
1/4 c. butter (unsalted)
1 large egg
2 t. vanilla extract
1/2 c. sour cream

Preheat oven to 350 degrees F. Grease several baking sheets or coat with nonstick spray.

In a medium bowl, beat together the cocoa powder, baking soda, and 3/4 c. hot water. Let stand until the foaming subsides.

In a large bowl, with an electric mixer, beat together the brown sugar, shortening, and butter until well blended, about 2 minutes. Scrape the bowl. Add the egg and vanilla and beat until very light and fluffy, about 2 minutes more. Beat in half of the flour mixture; scrape down the sides of the bowl. Add the sour cream, then the cocoa mixture, then the rest of the flour and the baking powder, and salt.

Using a 1/4 c. measuring cup, drop the dough onto the baking sheets. Barely spread them into a circle, but don't spread too much. Space them about 3 inches apart.

Bake the cookies 10-12 minutes, or until they just spring back when touched. (They are very cake-like). Let the pan cool for about 4 minutes on a wire rack, then transfer the cookies to the rack. Let stand until completely cooled.

Filling

1/3c. vegetable shortening
1/3 c. unsalted butter
1 c. powdered sugar
1 1/2 T light corn syrup
2 t. vanilla extract
1/8 t. salt
1 7-oz. jar marshmallow cream ( THE best stuff on Earth!)

Mix with electric mixer until smooth. (Today, I did a little variation and added 1 c. semi sweet chocolate chips, melted, then cooled.) Spread between two cookies. Roll the sides in sprinkles if you're feeling crazy.

Already?? My kids still have another week, then the oldest two have finals. Lucky y'all. Please, please, pleeeeaaaase share the Whoopie Pie recipe!! I've always loved them and don't have a recipe. They are too cute! :)

Oh yummo! I have never tried a whoopie pie, just haven't seen them in Australia...but I want to, they look delicious!
